Since Baby Doc was born, we have been living on crockpot meals and easy one-dish meals. Easy prep means easy clean up and less time in the kitchen!! This one-dish meal fit the bill for everything I was looking for!
We love breakfast for dinner around here. This Spinach and Egg Casserole (with some sausage thrown in for fun) was fantastic for dinner, but would also be great for breakfast!
I think this was the easiest dinner I have made in ages. Seriously. It really doesn’t get any easier than this. And, to top it all off, it was really good! Farmer Doc even wanted leftovers the next day! (He was too late, I ate it all. )
I never had grits before I moved to Indiana. It’s just not something that we eat in New England. But, I have to say… I am a fan! (Especially when they’re loaded with cheese…) And to celebrate National Pork Month, let’s cook these cheesy grits with some sausage!
I found this recipe in a Better Homes and Gardens cookbook. I adapted it a little bit, and it has become one of my favorites! It’s an easy baked risotto dish, with plenty of sausage and veggies.
Start with 1-1.5 pounds of ground sausage and a chopped onion.
