This is a pretty awesome way to ring in the New Year – a comfort food recipe and the promise of a giveaway to come! This broccoli-cheese soup is the perfect slow-cooked warm up to a cold winter’s day.

To make this wonderful soup… start of with every slow cooker’s best friend… Slow Cooker Liners. I promise you. You will never go back to a naked slow cooker again.
Once your slow cooker is clothed and ready to go, melt 1 stick of butter in a large saucepan.
Add a 16 ounce package of frozen broccoli, and toss to coat.
Cook for 5-10 minutes, until the broccoli is no longer frozen and gets that beautiful steamed green color.
Put the broccoli in the crockpot and then add…
…Two cans of cream of chicken soup…
…Two cans of cream of mushroom soup…
…Four cups of milk…
…And 16 ounces of Velveeta, cubed.
Give it a good stir, cover, and cook on low for 3-4 hours. About once an hour, give the whole thing a good stir. I know, I know – you’re not supposed to take the lid off a crockpot once it is crockpotting. But this one is a little bit of an exception… You’ve got that condensed soup and those cubes of cheese in there, and they need a little mixing to make sure all the melty goodness is evenly distributed. It’s okay to lift the lid and mix every once in a while. Just don’t go overboard.
This would be perfect to start on New Year’s morning… you’ll have a warm and yummy bowl of soup ready for a late lunch after you’ve slept in from the festivities the night before.
I will say that this soup ended up being a little thinner than we usually like. I thought about adding a little bit of cornstarch at the end to thicken it up, but wasn’t sure if that would change the taste (which was just about perfect). Next time… I might use 2% milk instead of skim. And I might puree some more broccoli in some of the liquid to thicken it up a little. And Farmer Doc asked for smaller broccoli chunks instead of the bigger florets. But I like the big pieces of broccoli… We’ll have to see if we can compromise about that one.
