Spicy Sausage and Rice

I think this was the easiest dinner I have made in ages. Seriously. It really doesn’t get any easier than this. And, to top it all off, it was really good! Farmer Doc even wanted leftovers the next day! (He was too late, I ate it all. Smile)

Freezer rice

I prefer brown rice over white rice. But brown rice takes at least 45 minutes to cook, and white rice can be cooked in about 15 minutes. And I don’t always have those extra 30 minutes to get dinner on the table. So when I do have time, I cook up a big batch of brown rice and pop it in the freezer!

Sausage and artichoke risotto

I found this recipe in a Better Homes and Gardens cookbook. I adapted it a little bit, and it has become one of my favorites! It’s an easy baked risotto dish, with plenty of sausage and veggies.
