Seriously. Farmer Doc is starting to get tired of my crockpot cooking. But I love it! Especially on those days when I just don’t have the energy to stand in the kitchen to make dinner… that crockpot sure comes in handy!
Because I just can’t get enough… another recipe from “Slow Cooking All Year ‘Round” by Gooseberry Patch. You know you love it, too!
Whisk up one can of condensed cream of chicken soup with 1 cup of milk.
Pour enough soup in the bottom of the crockpot to just cover the bottom.
Top with 4-6 chicken breasts. Mine were on the big side (and I never get to say that!), so I just used 3. And yes, these are frozen. Just throw them right in there!
Layer a few slices of ham over the chicken.
And a few slices of Swiss cheese over the ham.
Top with the rest of the soup. (I used a little too much soup in the bottom, and didn’t have quite as much as I would have liked to cover the top. When in doubt, go sparingly on your first layer!)
Cover, and cook on low for 4-6 hours (or on high for 2-3 hours). It comes out looking all golden brown and delicious like it was right out of the oven!
Serve with a veggie… cause everyone needs to eat their veggies. This also would have been good with some brown rice out of the freezer… with that sauce drizzled all over the rice… yum!
