The recipe for Strawberry French Toast is from Gooseberry Patch’s brand-new cookbook, “Garfield… Recipes with Cattitude!”
Start with 1/2-3/4 of a loaf of French bread, and slice it into 1-inch thick slices. I do this the night before, and leave it sitting on the counter overnight. Or stash it inside your microwave or your oven if you're afraid that the dog or cat will jump on the counter to steal your bread (it happens...). Yes, the bread gets a little dry, but that helps it soak up the egg mixture that much better, and makes for amazing French toast the next morning!
When you’re ready to start cooking, beat together 3 eggs, 3/4 cup half-and-half, and 1 tablespoon strawberry jam.
Pour that mixture into a shallow dish (I use one of my Pampered Chef coating trays). Dip the bread, both sides, into the egg mixture. (Try to get some of that strawberry jam to stick to the bread!)
In a large skillet, melt 2-3 tablespoons butter. Then start cooking up your French toast!
Cook on both sides, until the bread is golden brown and delicious all over.
While you’re manning the skillet, it’s easy to whip up some strawberry butter for a fun French toast topping. With an electric mixer, combine 1/4 cup softened butter and 1/3 cup strawberry jam on low speed until well mixed.
It turns this beautiful shade of pink, and should be nice and smooth.
Serve the French toast warm, with the strawberry butter at room temperature (it will melt really fast on your warm French toast!). Top with fresh sliced strawberries, and add some powdered sugar or a little maple syrup if you want a little more sweetness to your morning.
