For this one-dish speedy couscous – start with 1 zucchini, halved and chopped; 1 carrot, peeled and chopped (or grated, if you prefer); and 1 celery stalk, sliced.
Add 1-12 ounce package of uncooked couscous. (You can find couscous in your grocery store near the rice.)
Add 2 cups of cooked chicken. This would be a great way to use up some leftover chicken. I didn’t have any, so I just cooked two chicken breasts in a skillet with some olive oil, salt, and pepper. Quick and easy (and probably the hardest part of this entire meal!).
Bring 2 cups of orange juice to a boil (I used the same pan I cooked the chicken in), and pour over the couscous mixture. Stir it up to get it good and mixed. Then cover and let everything stand for five minutes.
When your five minutes are up, add 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/4 cup fresh chopped basil, and 2 chopped green onions. I also added some fresh chopped cilantro. Give it all a good stir to get the herbs mixed in, and you’re ready to eat!
