Upside-down pizza casserole

Okay, I know that when you think “casserole” you don’t automatically think of something yummy. But hear me out here… I’m a huge fan of a dish that I can prep, toss in the oven, and then forget about for a little bit. (You know, wash the dishes, clean up, do a load of laundry, read a book, put my feet up with a cocktail… well, one of those anyway…)

And, come on, how yummy does this look?!

Brown 1-1.5 pounds of ground beef.

Add 15 ounces of tomato sauce. If you want some veggies in your pizza, add them here, too. We didn’t add any veggies to this one.

Heat the meat and sauce until it’s warm and bubbly. Then pour the meaty sauce into a casserole dish.

Top with 1-1.5 cups of mozzarella cheese.

Open a can of biscuits (it doesn’t get any easier than that!), and flatten them a little bit with your hands.

Lay the flattened biscuits over the top of the casserole.

Pop it in a 400 degree oven for 15-17 minutes until the biscuits are golden brown and delicious.

And that’s it! (Pretend there’s a big pile of green salad on the plate behind this, please.)

This was super yummy, but I only used 1 pound of ground beef. Next time I would definitely bump that up to 1.5-2 pounds of meat. I might also use sausage or venison instead of ground beef. It’s your pizza – mix it up!

  5. This dish really didn’t travel or reheat all that great... it still tasted great, but it didn’t look all that pretty. Try putting the biscuits on the bottom, I bet it will be more portable that way!

  6. Just tried your idea, but used turkey burger, roasted garlic pasta sauce, 16 oz. can diced tomatoes, onion slices with mozzarella cheese slices, and Bisquick biscuit dough covering the top.
